1pound skinless and boneless chicken thighs, cut into1-inch cubes
1 teaspoonsalt
1 teaspoonfresh ground black pepper
3garlic cloves, minced
1 tablespoonlemon zest
2 tablespoonsolive oil
Lemon Pepper Butter:
¼ cupunsalted butter, softened
½ teaspoonsalt
¼ teaspoonpaprika
½ teaspoonground black pepper
2 tablespoonslemon juice
1 teaspoonlemon zest
Instructions
In a large bowl, combine chicken, salt, pepper, minced garlic, lemon zest, and olive oil. Toss well to coat. Cover and marinate in the refrigerator for at least 15 minutes, or overnight for enhanced flavor.
Thread the marinated chicken onto skewers, packing tightly.
Preheat the air fryer to 350 degrees Fahrenheit. Place skewers in the basket and cook for 7 minutes.
Open the air fryer, flip the skewers, and cook for another 7-10 minutes, until the internal temperature reaches 165 degrees Fahrenheit.
In a medium bowl, prepare the lemon pepper butter by combining softened butter, salt, paprika, black pepper, lemon juice, and zest until smooth.
Once cooked, baste the chicken skewers with the lemon pepper butter and serve hot.
