1 tablespoonolive oil
2 tablespoonsbutter
1/2medium onion, chopped
3cloves garlic, minced
1/4 teaspoonItalian seasoning
1 cupuncooked orzo pasta
2 cupschicken broth
2 tablespoonslemon juice
1 cupheavy cream
2 cupscooked shredded chicken (rotisserie chicken works great)
1/2 cupfreshly grated Parmesan cheese
2 cupsfresh baby spinach (packed)
Salt and pepper, to taste
Instructions
In a large pot, heat the olive oil and butter over medium-high heat. Add the chopped onion and sauté for about 3-4 minutes, or until softened and translucent.
Add the minced garlic, Italian seasoning, and uncooked orzo to the pot. Stir and cook for another 2-3 minutes, allowing the orzo to lightly toast and absorb the flavors.
Pour in the chicken broth, lemon juice, and heavy cream. Stir to combine. Once the mixture starts to bubble, reduce the heat to medium or medium-low. Let it simmer uncovered for about 10 minutes, stirring occasionally. Keep an eye on the liquid to make sure it doesn’t reduce too quickly before the pasta is fully cooked.
Once the orzo is tender and most of the liquid has absorbed, stir in the cooked shredded chicken.
Remove the pot from heat and stir in the grated Parmesan cheese and fresh spinach. Cover the pot and let it sit for 3-5 minutes to allow the cheese to melt and the spinach to wilt.
Season with salt and pepper to taste. Serve immediately and enjoy!
