  • ¾lb thin-cut sirloin steaks (about3thin steaks), cut into thin strips
  • 1small egg
  • 4 tbspcornstarch
  • ¼ tspsalt
  • ¼ tspblack pepper
  • tspwhite pepper
  • 4 ½ tbspsunflower oil, divided
  • 1medium onion, peeled and sliced into thin strips
  • 1red chili, finely sliced (seeds removed if you prefer less heat)
  • 1 tspminced ginger
  • 3garlic cloves, minced
  • 2 tbsprice vinegar
  • 3 tbspdark soy sauce
  • 2 tbsptomato paste
  • 6 tbspsuperfine sugar
  • 2 tbsptomato ketchup
  • 2 tbspsweet chili sauce

Instructions

  1. In a bowl, combine the thin-cut steak strips with the egg, stirring to coat the steak in the egg.
  2. Add the cornstarch, salt, black pepper, and white pepper to the bowl, tossing everything together until the steak is well-coated. The mixture will be sticky.
  3. Heat 3 tbsp of sunflower oil in a large skillet or wok over high heat until very hot.
  4. Working in batches, add the beef strips to the skillet one at a time, spreading them out evenly. Cook until the steak is dark brown and crispy, about 5–6 minutes. Stir the beef 3–4 times to ensure crispiness.
  5. Once the beef is crispy, use a slotted spoon or tongs to remove it from the skillet and place it on a paper towel-lined bowl to absorb any excess oil.
  6. Add the remaining 1 ½ tbsp oil to the pan and lower the heat to medium. Add the sliced onion and cook for 2 minutes until softened.
  7. Stir in the sliced red chili, minced ginger, and garlic, and cook for another 30 seconds, stirring frequently.
  8. Add the rice vinegar, soy sauce, tomato paste, superfine sugar, ketchup, and sweet chili sauce to the pan. Turn up the heat and bring the sauce to a bubble. Let it cook for a couple of minutes until the sauce reduces slightly.
  9. Return the beef to the pan, stir everything together, and heat for an additional 1–2 minutes until the beef is hot throughout.
