Crockpot Beef Vegetable Soup

A hearty and nutritious soup made with beef and a variety of vegetables, cooked slowly in a crockpot.

  • 1pound beef stew meat
  • 4 cupsbeef broth
  • 2 cupscarrots, chopped
  • 2 cupspotatoes, diced
  • 1 cupcelery, chopped
  • 1 cupgreen beans, cut
  • 1onion, diced
  • 2cloves garlic, minced
  • 1 teaspoondried thyme
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 1bay leaf

Instructions

  1. In a crockpot, combine beef, broth, carrots, potatoes, celery, green beans, onion, and garlic.
  2. Add thyme, salt, pepper, and bay leaf.
  3. Stir the ingredients to mix well.
  4. Cover and cook on low for 8 hours or on high for 4 hours.
  5. Remove bay leaf before serving.

Notes

Adjust vegetables according to preference.
For added flavor, sear the beef before adding to the crockpot.
This soup freezes well for future meals.
