Crockpot Chicken And Rice

A simple and flavorful dish made with chicken and rice cooked in a crockpot.

Ingredients

  • 4boneless, skinless chicken breasts
  • 2 cupslong-grain white rice
  • 4 cupschicken broth
  • 1 cupdiced onions
  • 1 cupfrozen mixed vegetables
  • 2cloves garlic, minced
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 1 teaspoonpaprika
  • 1 tablespoonolive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onions and garlic until soft.
  3. Place chicken breasts in the crockpot.
  4. Add sautéed onions, garlic, rice, chicken broth, mixed vegetables, salt, pepper, and paprika.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Once cooked, shred the chicken and mix well before serving.

Notes

Adjust seasoning to taste.
For added flavor, use homemade chicken broth.
Can substitute brown rice; adjust cooking time accordingly.
