Crockpot Chicken Pot Pie

A hearty and comforting chicken pot pie made easily in a crockpot.

Ingredients

  • 2lbs boneless, skinless chicken breasts
  • 1 cupcarrots, diced
  • 1 cuppeas
  • 1 cuppotatoes, diced
  • 1onion, diced
  • 2 cupschicken broth
  • 1 cupheavy cream
  • 1 teaspoongarlic powder
  • 1 teaspoonthyme
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 1package refrigerated pie crusts

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add carrots, peas, potatoes, and onion.
  3. Pour chicken broth and heavy cream over the ingredients.
  4. Season with garlic powder, thyme, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and stir everything together.
  7. Transfer the mixture to a baking dish and top with pie crusts.
  8. Bake in the oven at 375°F for 15-20 minutes or until crust is golden brown.

Notes

You can substitute vegetables based on your preference.
For a thicker filling, add cornstarch mixed with water before cooking.
Leftovers can be stored in the refrigerator for up to 3 days.
