Crockpot Corned Beef And Cabbage

A hearty dish of corned beef and cabbage cooked slowly in a crockpot for rich flavors.

Ingredients

  • 3to4pounds corned beef brisket
  • 1medium onion, quartered
  • 4cloves garlic, minced
  • 4 cupswater
  • 1 teaspoonblack peppercorns
  • 1head cabbage, cut into wedges
  • 4large carrots, cut into chunks
  • 6medium potatoes, quartered

Instructions

  1. Place the corned beef brisket in the crockpot.
  2. Add onion, garlic, and peppercorns.
  3. Pour in water until meat is covered.
  4. Cook on low for 8 to 10 hours, or until tender.
  5. About 1 hour before serving, add cabbage, carrots, and potatoes.
  6. Continue to cook until vegetables are tender.

Notes

Adjust the seasoning to taste.
Use leftover corned beef for sandwiches.
