Crockpot Tomato Soup

A simple and delicious crockpot tomato soup perfect for any occasion.

Ingredients

  • 2cans of diced tomatoes (14.5 ozeach)
  • 1 cupof vegetable broth
  • 1medium onion, chopped
  • 2cloves of garlic, minced
  • 1 teaspoonof dried basil
  • 1 teaspoonof dried oregano
  • 1/2 teaspoonof salt
  • 1/4 teaspoonof black pepper
  • 1 cupof heavy cream

Instructions

  1. Combine diced tomatoes, vegetable broth, onion, garlic, basil, oregano, salt, and pepper in the crockpot.
  2. Stir the mixture well.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Puree the soup using an immersion blender until smooth.
  5. Stir in the heavy cream and heat for an additional 15 minutes.

Notes

Serve with crusty bread for a complete meal.
This soup can be stored in the refrigerator for up to 5 days.
