1lb fresh cheese tortellini
1/4 cupextra-virgin olive oil
2 tablespoonsbalsamic vinegar
1/2 tablespoonhoney
1/2 teaspoonkosher salt
1/4 teaspoonfreshly ground black pepper
3/4 cupchopped salami or prosciutto
1/2 cupbaby spinach
1/2 cupoil-packed sun-dried tomatoes, chopped
1/4 cupfreshly grated Parmesan
Instructions
Bring a large pot of salted water to a boil. Cook the cheese tortellini according to the package instructions. Drain and transfer to a large serving bowl.
In a separate bowl, whisk together the olive oil, balsamic vinegar, and honey. Season with salt and black pepper to taste.
Add the chopped salami (or prosciutto), baby spinach, and sun-dried tomatoes to the bowl with the tortellini. Pour the dressing over the top and toss everything together until well combined.
Sprinkle freshly grated Parmesan on top and serve immediately, or chill in the refrigerator for enhanced flavor.
