1(16-ounce) can diced tomatoes, drained
3Roma tomatoes, chopped
2½ tablespoonsminced garlic
4 tablespoonsolive oil
¾ cupfresh basil, chopped
Shaved Parmesan, optional, for topping
1baguette
¼ cupbutter, softened
¼ cupgrated Parmesan cheese
2 teaspoonsItalian seasoning
Instructions
In a medium bowl, combine the drained diced tomatoes, chopped Roma tomatoes, minced garlic, olive oil, and chopped fresh basil. Stir gently to mix.
Refrigerate the bruschetta mixture until ready to serve.
Slice the baguette into individual pieces. Spread softened butter on each slice, then sprinkle with grated Parmesan cheese and Italian seasoning.
Broil the bread slices on HIGH for 2-5 minutes or until toasted to your liking. Alternatively, you can toast them on a skillet over low to medium heat.
Just before serving, spoon the bruschetta mixture onto the toasted bread slices. Optionally, top with shaved Parmesan.
