Freezer Breakfast Casserole

A hearty and convenient breakfast casserole that you can prepare in advance and freeze for quick morning meals.

  • 1pound sausage
  • 12large eggs
  • 2 cupsmilk
  • 4 cupsdiced bread
  • 2 cupsshredded cheese
  • 1 cupchopped bell peppers
  • 1 cupchopped onions
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned. Drain excess fat.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper.
  4. Add the cooked sausage, bread, cheese, bell peppers, and onions to the egg mixture. Stir to combine.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 30-35 minutes, or until the center is set and the top is golden.
  7. Let it cool, then cut into squares and freeze if desired.

Notes

Customize with your favorite vegetables or meats.
Thaw overnight in the refrigerator before reheating.
Reheat in the microwave or oven until heated through.
