3 cups(432 g) fresh strawberries, sliced
1 tablespoongranulated sugar
1 tablespoonlemon juice
1 ½ tablespoonscornstarch
1large egg, beaten
1 teaspooncoarse sugar (like turbinado sugar)
Honey, for drizzling
Vanilla ice cream (optional, for serving)
Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper. Set it aside.
Roll the pie dough on a lightly floured surface into a 14-inch circle, about ⅛-inch thick. Transfer it to the prepared baking sheet and refrigerate while you make the filling.
In a medium bowl, mix together the sliced strawberries, granulated sugar, lemon juice, and cornstarch. Toss gently to coat, then let the mixture sit for 10 minutes to allow the juices to release.
Take the chilled pie crust from the refrigerator and spoon the strawberry mixture into the center, leaving a 2-inch border around the edges.
Carefully fold the edges of the dough over the filling, creating a rustic, pleated look.
Brush the exposed crust edges with the beaten egg and sprinkle the crust with coarse sugar.
Bake for 30–35 minutes, or until the crust is golden and the filling is bubbling. If the edges of the crust brown too quickly, cover them loosely with aluminum foil.
Allow the galette to cool for at least 10 minutes before serving.
Drizzle with honey and top with vanilla ice cream if desired.
