  • 12large zucchinis (around10oz/300 gramseach)
  • 6garlic cloves
  • 3 tablespoonsof extra virgin olive oil
  • Sea salt and pepper to taste
  • Fresh parsley (a small handful)
  • Parmesan cheese (optional)

Instructions

  1. Step 1: Prepare the Zucchinis
  2. Wash the zucchinis and pat them dry. Slice them into rounds about ½ inch thick.
  3. Lay the zucchini slices on a plate, seasoning both sides generously with sea salt. Let them sit for 30 minutes to draw out excess moisture.
  4. Step 2: Make the Garlic and Parsley Sauce
  5. Finely chop the parsley and crush the garlic into a paste.
  6. Heat a teaspoon of olive oil in a large frying pan over high heat. Add the garlic and cook for 1-2 minutes until fragrant.
  7. Remove the garlic from the pan and place it in a bowl. Add the parsley and the rest of the olive oil, mixing well. Adjust with salt and pepper to taste. Set aside.
  8. Step 3: Cook the Zucchini Rounds
  9. Rinse the zucchini rounds to remove the excess salt and pat them dry.
  10. Heat the pan for 2-3 minutes. Once hot, add the zucchini rounds in a single layer, making sure not to overcrowd the pan.
  11. Cook for 3 minutes until one side is golden, then flip and cook for another 3 minutes.
  12. Remove from the pan and place on paper towels to absorb any extra oil.
  13. Step 4: To Serve
  14. Place the cooked zucchini rounds on a serving plate. Lightly season with salt and pepper.
  15. Drizzle with the garlic and parsley sauce, and top with shaved Parmesan cheese, if desired. Serve and enjoy!
