  • 1/3 cupmayonnaise
  • Juice and zest of 1 lime
  • 1clove garlic, finely minced or grated
  • 1 tspchili powder
  • 1/2 tsppaprika
  • 1/2 tspground cumin
  • 1/4 tspsalt
  • 1/4 tspfreshly cracked black pepper

Instructions

  1. Lay the cucumber slices on a layer of paper towels. Place another layer of paper towels on top and gently press to absorb any excess moisture. Let them sit while you prepare the rest of the ingredients.
  2. In a medium-sized bowl, whisk together the Greek yogurt, mayonnaise, lime juice, lime zest, garlic, chili powder, paprika, cumin, salt, and pepper until smooth. Taste the dressing and adjust the seasoning if needed.
  3. In a large bowl, combine the cucumbers, rotisserie chicken, cilantro, green onions, jalapeno, red onion, red bell pepper, and sweet corn.
