Delicious low-carb chocolate chip cookies suitable for a keto diet.

  • 1/2 cupunsweetened cocoa powder
  • 1/2 cuperythritol sweetener
  • 1/4 cupmelted coconut oil
  • 2large eggs
  • 1 tspvanilla extract
  • 1/2 tspbaking soda
  • 1/4 tspsalt
  • 1/2 cupsugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, erythritol, baking soda, and salt.
  3. In another bowl, whisk together melted coconut oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are firm.
  8. Allow cookies to cool before serving.

Notes

Store cookies in an airtight container.
Chill dough for 30 minutes for thicker cookies.
