1 1/2pounds ground chicken, pork, or turkey
1/2 cupgrated parmesan cheese
1shallot, chopped
8cloves garlic, 2 chopped, 6 whole
1/4 cupfresh oregano, chopped
2 teaspoonssweet or regular paprika
1 tablespoonbalsamic vinegar
Kosher salt and black pepper
Chili flakes
2 tablespoonsextra virgin olive oil
1 1/2 cupscherry tomatoes
1 cupdry white wine
2 cupsdry orzo pasta
1/2 cupheavy cream or whole milk
6 tablespoonssalted butter
1sprig rosemary
4sprigs fresh thyme
1/2 cupcrumbled feta cheese
Fresh basil and dill, for serving
Instructions
Crockpot: Combine meats, spices, and seasonings; form into meatballs. Cook with tomatoes and wine on low for 3-4 hours. Broil meatballs with butter, herbs, and garlic. Cook orzo in slow cooker, then serve topped with herbs and feta.
Instant Pot: Sauté meatballs, add tomatoes and wine, cook under pressure. Brown garlic in butter, cook orzo, then serve as above.
Stove-Top: Sear meatballs, add tomatoes and herbs. Stir in orzo, cook until tender. Finish with milk and herbs, serve topped with cheese.
