Instructions

  1. Preheat your oven to 350°F. Lightly grease an 8-inch round cake pan (2 inches high) with baking spray. Use a paper towel to evenly spread the spray, and then line the bottom with parchment paper, lightly greasing it as well. Set aside.
  2. In a medium-large bowl, whisk together the yogurt, granulated sugar, and brown sugar until fully combined.
  3. Add the eggs and continue whisking until smooth.
  4. Stir in the flour, baking powder, salt, cinnamon, allspice, and cloves. Mix until fully combined.
  5. Gradually add in the sunflower oil, mixing until smooth (it may appear a little separated at first, but continue stirring).
  6. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until the cake is springy to the touch and a toothpick inserted into the center comes out clean. Avoid overbaking.
