Paleo Breakfast Casserole

A hearty and nutritious breakfast casserole suitable for a paleo diet.

  • 8large eggs
  • 1 cupalmond milk
  • 1lb ground turkey
  • 1 cupdiced bell peppers
  • 1 cupspinach, chopped
  • 1medium onion, diced
  • 1 tspgarlic powder
  • 1 tsppaprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook ground turkey over medium heat until browned.
  3. Add diced onion and bell peppers to the skillet and sauté until softened.
  4. In a bowl, whisk together eggs, almond milk, garlic powder, paprika, salt, and pepper.
  5. Add spinach to the skillet mixture and stir until wilted.
  6. Combine the turkey mixture with the egg mixture in a baking dish.
  7. Bake for 30-35 minutes or until the eggs are set.
  8. Let it cool for a few minutes before slicing and serving.

Notes

Store leftovers in the refrigerator for up to 3 days.
This casserole can be made ahead and reheated.
Feel free to add other vegetables or spices as desired.
