2 1/2 cupsall-purpose flour
1/2 cuppowdered sugar (plus extra for dusting)
1 cup(2sticks) unsalted butter, room temperature
1 cupraw pistachios, shelled
1/4 teaspoonsalt
2 teaspoonsgreen tea powder
Optional: Gel food coloring (blue or yellow)
Instructions
Preheat the oven to 350°F.
Spread pistachios in a single layer on a baking sheet and toast in the oven for about 7 minutes, or until aromatic but not browned. Let them cool, then grind in a food processor until they form a coarse meal.
In a large mixing bowl, combine flour, salt, green tea powder, and pistachio meal.
In a separate bowl or stand mixer, cream the butter and powdered sugar together for several minutes until the mixture becomes smooth and creamy. Add in vanilla extract and optional food coloring, mixing well. For better control, use a toothpick to add a small amount of gel food coloring.
Gradually add the dry flour mixture to the butter mixture, stirring until fully combined.
Roll small teaspoon-sized portions of dough into balls and place them on a baking sheet, spaced about 2 inches apart. No parchment paper is necessary.
Bake for about 17 minutes, or until the cookies set and the bottoms are lightly golden. Let the cookies cool completely on a wire rack.
Once cooled, gently roll the cookies in powdered sugar to coat.
