Potato Breakfast Casserole

A hearty potato breakfast casserole with eggs, cheese, and savory spices.

  • 4 cupsdiced potatoes
  • 6large eggs
  • 1 cupshredded cheddar cheese
  • 1 cupmilk
  • 1/2 cupdiced bell peppers
  • 1/2 cupdiced onions
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 1 teaspoongarlic powder
  • 1 teaspoonpaprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the diced potatoes, bell peppers, onions, salt, pepper, garlic powder, and paprika.
  3. In another bowl, whisk together the eggs and milk.
  4. Combine the potato mixture with the egg mixture and stir in the cheddar cheese.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 45-50 minutes or until the potatoes are tender and the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

For extra flavor, add cooked sausage or bacon.
Use any cheese of your choice.
This casserole can be prepared the night before and baked in the morning.
