8 cupslow-sodium chicken broth
1/4 cupsoy sauce
1/4 cuprice vinegar
1pound fresh or frozen shrimp, peeled and deveined
32frozen dumplings (such as chicken or vegetable)
Salt and pepper to taste
16 ouncesrice noodles, cooked according to package instructions
Hoisin sauce, sriracha, sliced onion, cilantro, and jalapenos for garnish (optional)
Instructions
Heat the sesame oil in a large soup pot over medium heat for about 30 seconds.
Stir in sambal chile paste, minced garlic, and ginger. Sauté for another 30 seconds to release the flavors.
Add the chicken broth, soy sauce, and rice vinegar to the pot. Increase the heat to high and bring to a boil.
Once boiling, add the shrimp and frozen dumplings. Lower the heat to a simmer and cook for 3 minutes, until the shrimp is cooked through and the dumplings are heated.
Taste and season with salt and pepper as needed.
Divide the cooked rice noodles among four bowls. Ladle the shrimp and dumpling soup over the noodles.
