Instructions

  1. Cut the flatbread to fit your pan, if necessary. A large 12-inch pan works best for this recipe.
  2. In a mixing bowl, combine the ground chicken, tomato paste, Baharat spice mix, paprika, garlic, salt, and parsley (if using). Mix until the chicken is well-coated with the spices.
  3. Spread the chicken mixture evenly across one side of the flatbread, covering the surface like you would spread peanut butter.
  4. Heat 1 tablespoon of olive oil in the pan over high heat. Place the flatbread, with the chicken side down, into the pan. Cook for 90 seconds, pressing lightly with a spatula to encourage browning. The chicken will stick to the bread.
  5. Flip the flatbread carefully with tongs and cook the other side of the bread for another 90 seconds, until golden and crispy. If the bread is browning too fast, reduce the heat.
  6. Once crispy, slide the flatbread onto a cutting board. Drizzle with extra virgin olive oil and top with crumbled feta or goat cheese.
