1/3 cup(110g) Honey
1 1/2 tspHot Sauce (adjust heat to taste)
3/4 tspChili Flakes
2Chicken Breasts (about250g/9ozeach)
2 tspPaprika
1 tspSalt
1/2 tspeach: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
1/4 tspCayenne Pepper
1/4 cup(35g) All-Purpose Flour
2Eggs, beaten
1 cup(65g) Panko Breadcrumbs
Vegetable Oil, for frying (about 6-8 tablespoons)
7oz(200g) Feta, crumbled
Instructions
Prepare the Honey Sauce:
In a small bowl, combine honey, hot sauce, and chili flakes. Warm in the microwave for about 20 seconds or on the stovetop until slightly simmering. Stir well and set aside to cool. Adjust spice levels with more chili flakes or hot sauce if desired.
Slice the Chicken:
Slice each chicken breast horizontally to create 4 evenly-sized pieces.
Season the Chicken:
In a separate bowl, mix the paprika, salt, onion powder, garlic powder, oregano, black pepper, and cayenne pepper. Divide the mixture in half.
Prepare Breading Stations:
Arrange three shallow dishes:
Dish 1: Combine flour and half of the seasoning mix.
Dish 2: Beaten eggs.
Dish 3: Panko breadcrumbs mixed with the remaining seasoning.
Coat the Chicken:
Dredge each piece of chicken through the seasoned flour, then dip into the egg, and finally coat thoroughly with the seasoned breadcrumbs. Place the coated pieces on a tray.
Fry the Chicken:
Heat enough vegetable oil in a large pan over medium-high heat to coat the base. Once the oil is hot (breadcrumbs should sizzle quickly), fry the chicken in batches if necessary. Cook for 3-4 minutes per side, until golden brown and crispy on the outside, and cooked through in the center. Place the fried chicken on a wire rack over a tray.
Add Feta:
Sprinkle crumbled feta over the fried chicken pieces, ensuring an even layer. Place under a high-heat grill or broiler until the feta begins to soften and develop a slight golden crust.
Serve with Hot Honey:
Drizzle the spicy honey sauce generously over the crispy chicken and serve immediately. Store any leftover honey sauce in the refrigerator for later use.
