Preparing the Glaze:
Mix the Glaze: In a medium mixing bowl, combine raspberry jam, olive oil, soy sauce, apple cider vinegar, mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Stir until everything is well blended.
Cooking the Chicken:
Season the Chicken: In a small bowl, mix together the kosher salt, black pepper, and chili powder. Rub this seasoning mix all over the chicken thighs to coat them evenly.
Cook the Chicken: Heat olive oil in a large skillet over medium heat. Once hot, add the seasoned chicken thighs. Cook each side for about 5 minutes or until golden brown and cooked through, achieving an internal temperature of 165°F.
Make the Sauce: Remove the chicken and set aside. In the same skillet, add the sliced jalapeño and prepared glaze. Cook over medium heat, stirring frequently, until the sauce thickens slightly.
