2.4lbs bone-in, skin-on chicken thighs or drumsticks (5–6pieces)
1red onion, peeled and cut into wedges
Glaze:
3cloves garlic, minced
3 tbsphoney
3 tbspsoy sauce
1 tbspapple cider vinegar or white vinegar
1 tspsesame oil
1/2 tspblack pepper
Garnish (Optional):
Sesame seeds
Fresh cilantro or parsley (or other greens like green onions or chives)
Instructions
Preheat the oven to 390°F (or 360°F for fan-assisted ovens).
Line a baking dish with aluminum foil followed by parchment paper. The dish should allow the chicken to fit comfortably, with space enough to keep the glaze from drying out.
In a bowl, combine the minced garlic, honey, soy sauce, vinegar, sesame oil, and black pepper to make the glaze.
Place the chicken and onion in the prepared baking dish, skin side down. Pour the glaze evenly over the chicken and onion.
Bake for 50-60 minutes. After 25 minutes, flip the chicken and continue baking for another 25-35 minutes, or until the chicken is browned and the glaze is sticky. If the glaze isn’t thick enough, remove the chicken and return the pan to the oven for a few more minutes.
Once done, turn the chicken to coat it in the glaze and spoon extra glaze over the top.
Serve with rice and steamed vegetables, garnished with sesame seeds and fresh cilantro or parsley.
