  • 8 ouncesof oil-packed sun-dried tomatoes
  • 12garlic cloves, grated
  • 1small shallot, finely chopped
  • 1 teaspoondried oregano
  • 1 teaspoondried thyme
  • 1 teaspoonsmoked or regular paprika
  • 12teaspoons red chili flakes (adjust to taste)
  • 1/2 cupgrated parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare the Oil: Drain the oil from the sun-dried tomato jar into a small pot. You should have about 1/2 cup of oil. Chop 1/3 cup of the sun-dried tomatoes and stir them into the oil.
  2. Infuse the Oil: Add the grated garlic, chopped shallot, oregano, thyme, paprika, and chili flakes to the pot. Place it over low heat and gently simmer for about 5 minutes, allowing the flavors to blend.
  3. Assemble the Dip: Transfer the grated parmesan to a serving bowl. Pour the warm, flavored oil over the cheese. Garnish with fresh basil leaves.
