Sweet Potato Breakfast Casserole

A delightful and nutritious breakfast casserole made with sweet potatoes, eggs, and spices.

  • 4 cupssweet potatoes, peeled and diced
  • 6large eggs
  • 1 cupmilk
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 1 teaspooncinnamon
  • 1/2 cupdiced onion
  • 1/2 cupbell pepper, diced
  • 1 cupshredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sweet potatoes, onion, and bell pepper.
  3. In another bowl, whisk together eggs, milk, salt, pepper, and cinnamon.
  4. Pour the egg mixture over the sweet potato mixture and stir to combine.
  5. Transfer to a greased baking dish.
  6. If using, sprinkle cheese on top.
  7. Bake for 45-50 minutes or until the sweet potatoes are tender and the eggs are set.
  8. Let it cool for a few minutes before serving.

Notes

Customize with your favorite vegetables.
Can be made ahead and stored in the refrigerator.
