  • 8 oz(225 g) feta cheese, crumbled
  • 4 oz(115 g) cream cheese, softened
  • 12tablespoons olive oil
  • 1 tablespoonlemon juice
  • Freshly ground black pepper, to taste
  • For the Roasted Strawberries:
  • 1 pint(2 cups) fresh strawberries, hulled and halved
  • 1 tablespoonbalsamic vinegar
  • 1 tablespoonhoney
  • Freshly ground black pepper, to taste
  • Garnish:
  • Fresh basil or mint leaves, chopped
  • Additional olive oil for drizzling
  • Black sesame seeds (optional)

Instructions

  1. Prepare the Roasted Strawberries:
  2. Preheat your oven to 375°F (190°C).
  3. In a mixing bowl, toss the halved strawberries with balsamic vinegar, honey, and a pinch of black pepper.
  4. Spread the strawberries on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 15-20 minutes, or until the strawberries are soft and slightly caramelized. Remove from oven and let cool.
  6. Prepare the Whipped Feta:
  7. In a food processor, combine the crumbled feta, cream cheese, olive oil, lemon juice, and a pinch of black pepper.
  8. Process until smooth and creamy, scraping down the sides as needed. Adjust the consistency with a bit more olive oil if necessary.
  9. Assemble the Dish:
  10. Spread the whipped feta onto a serving plate or bowl, creating a swirl with the back of a spoon.
  11. Spoon the roasted strawberries over the whipped feta.
  12. Drizzle with additional olive oil and garnish with chopped fresh basil or mint leaves.
  13. Sprinkle with black sesame seeds for extra texture and flavor, if desired.
