A delicious and hearty vegetarian breakfast casserole perfect for brunch or meal prep.
Ingredients

- 8large eggs
- 2 cupsmilk
- 4 cupsdiced vegetables (bell peppers, onions, spinach)
- 2 cupsshredded cheese
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1 teaspoongarlic powder
- 1 teaspoononion powder
- 1loaf of bread, cubed
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
- Add the cubed bread and diced vegetables to the egg mixture and stir to combine.
- Fold in the shredded cheese.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-50 minutes or until the center is set and the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
You can substitute any vegetables you like.
This casserole can be made ahead of time and stored in the refrigerator.
Reheat leftovers in the oven or microwave.
