Paleo Breakfast Casserole
A hearty and nutritious breakfast casserole suitable for a paleo diet.
Ingredients

- 8large eggs
- 1 cupalmond milk
- 1lb ground turkey
- 1 cupdiced bell peppers
- 1 cupspinach, chopped
- 1medium onion, diced
- 1 tspgarlic powder
- 1 tsppaprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook ground turkey over medium heat until browned.
- Add diced onion and bell peppers to the skillet and sauté until softened.
- In a bowl, whisk together eggs, almond milk, garlic powder, paprika, salt, and pepper.
- Add spinach to the skillet mixture and stir until wilted.
- Combine the turkey mixture with the egg mixture in a baking dish.
- Bake for 30-35 minutes or until the eggs are set.
- Let it cool for a few minutes before slicing and serving.
Notes
Store leftovers in the refrigerator for up to 3 days.
This casserole can be made ahead and reheated.
