Crockpot Breakfast Casserole
A hearty and easy breakfast casserole made in a crockpot.
Ingredients

- 1pound of breakfast sausage
- 6large eggs
- 2 cupsof shredded cheese
- 4 cupsof diced potatoes
- 1 cupof milk
- 1 teaspoonof salt
- 1/2 teaspoonof black pepper
Instructions
- Cook the breakfast sausage in a skillet until browned.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Layer the diced potatoes in the bottom of the crockpot.
- Add the cooked sausage over the potatoes.
- Pour the egg mixture over the sausage and potatoes.
- Sprinkle cheese on top.
- Cover and cook on low for 6-8 hours or until set.
Notes
Feel free to add vegetables like bell peppers or onions.
Make it ahead of time and refrigerate overnight before cooking.
Cut into squares for serving.
