A nutritious take on the classic green bean casserole with fresh ingredients.

- 1pound fresh green beans, trimmed
- 1 cupsliced mushrooms
- 1medium onion, diced
- 2cloves garlic, minced
- 1 cuplow-sodium vegetable broth
- 1 cupunsweetened almond milk
- 1 tablespoonolive oil
- 1 teaspoonsoy sauce
- 1 teaspoonblack pepper
- 1/2 teaspoonsalt
- 1 cupwhole grain breadcrumbs
Instructions
- Preheat oven to 350°F (175°C).
- Steam green beans until tender, about 5 minutes.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent.
- Add mushrooms and cook until soft, about 5 minutes.
- Stir in vegetable broth, almond milk, soy sauce, salt, and pepper. Bring to a simmer.
- Combine green beans with the mushroom mixture in a baking dish.
- Top with breadcrumbs and bake for 25 minutes until golden.
Notes
Use fresh green beans for the best flavor.
Adjust the seasoning to your taste.
Can substitute almond milk with any non-dairy milk.
