Crockpot Chicken Pot Pie
A hearty and comforting chicken pot pie made easily in a crockpot.
Ingredients

- 2lbs boneless, skinless chicken breasts
- 1 cupcarrots, diced
- 1 cuppeas
- 1 cuppotatoes, diced
- 1onion, diced
- 2 cupschicken broth
- 1 cupheavy cream
- 1 teaspoongarlic powder
- 1 teaspoonthyme
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1package refrigerated pie crusts
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add carrots, peas, potatoes, and onion.
- Pour chicken broth and heavy cream over the ingredients.
- Season with garlic powder, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken and stir everything together.
- Transfer the mixture to a baking dish and top with pie crusts.
- Bake in the oven at 375°F for 15-20 minutes or until crust is golden brown.
Notes
You can substitute vegetables based on your preference.
For a thicker filling, add cornstarch mixed with water before cooking.
Leftovers can be stored in the refrigerator for up to 3 days.
