A delightful and nutritious breakfast casserole made with sweet potatoes, eggs, and spices.
Ingredients

- 4 cupssweet potatoes, peeled and diced
- 6large eggs
- 1 cupmilk
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1 teaspooncinnamon
- 1/2 cupdiced onion
- 1/2 cupbell pepper, diced
- 1 cupshredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine sweet potatoes, onion, and bell pepper.
- In another bowl, whisk together eggs, milk, salt, pepper, and cinnamon.
- Pour the egg mixture over the sweet potato mixture and stir to combine.
- Transfer to a greased baking dish.
- If using, sprinkle cheese on top.
- Bake for 45-50 minutes or until the sweet potatoes are tender and the eggs are set.
- Let it cool for a few minutes before serving.
Notes
Customize with your favorite vegetables.
Can be made ahead and stored in the refrigerator.
