A hearty breakfast potato casserole that combines potatoes, cheese, and eggs for a satisfying meal.

- 4 cupsdiced potatoes
- 1 cupshredded cheddar cheese
- 6large eggs
- 1 cupmilk
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1/2 teaspoongarlic powder
- 1/2 cupdiced onion
- 1/2 cupdiced bell pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine diced potatoes, onion, and bell pepper.
- In another bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Layer the potato mixture in a greased baking dish.
- Pour the egg mixture over the potatoes.
- Sprinkle cheddar cheese on top.
- Bake for 45-50 minutes or until the potatoes are tender and the eggs are set.
Notes
You can add cooked sausage or bacon for extra flavor.
Feel free to use different types of cheese.
