A hearty and nutritious soup made with beef and a variety of vegetables, cooked slowly in a crockpot.
Ingredients

- 1pound beef stew meat
- 4 cupsbeef broth
- 2 cupscarrots, chopped
- 2 cupspotatoes, diced
- 1 cupcelery, chopped
- 1 cupgreen beans, cut
- 1onion, diced
- 2cloves garlic, minced
- 1 teaspoondried thyme
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1bay leaf
Instructions
- In a crockpot, combine beef, broth, carrots, potatoes, celery, green beans, onion, and garlic.
- Add thyme, salt, pepper, and bay leaf.
- Stir the ingredients to mix well.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Remove bay leaf before serving.
Notes
Adjust vegetables according to preference.
For added flavor, sear the beef before adding to the crockpot.
