A simple and flavorful dish made with chicken and rice cooked in a crockpot.
Ingredients

- 4boneless, skinless chicken breasts
- 2 cupslong-grain white rice
- 4 cupschicken broth
- 1 cupdiced onions
- 1 cupfrozen mixed vegetables
- 2cloves garlic, minced
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1 teaspoonpaprika
- 1 tablespoonolive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Sauté onions and garlic until soft.
- Place chicken breasts in the crockpot.
- Add sautéed onions, garlic, rice, chicken broth, mixed vegetables, salt, pepper, and paprika.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken and mix well before serving.
Notes
Adjust seasoning to taste.
For added flavor, use homemade chicken broth.
Can substitute brown rice; adjust cooking time accordingly.
