A hearty dish of corned beef and cabbage cooked slowly in a crockpot for rich flavors.
Ingredients

- 3to4pounds corned beef brisket
- 1medium onion, quartered
- 4cloves garlic, minced
- 4 cupswater
- 1 teaspoonblack peppercorns
- 1head cabbage, cut into wedges
- 4large carrots, cut into chunks
- 6medium potatoes, quartered
Instructions
- Place the corned beef brisket in the crockpot.
- Add onion, garlic, and peppercorns.
- Pour in water until meat is covered.
- Cook on low for 8 to 10 hours, or until tender.
- About 1 hour before serving, add cabbage, carrots, and potatoes.
- Continue to cook until vegetables are tender.
Notes
Adjust the seasoning to taste.
Use leftover corned beef for sandwiches.
