A creamy and flavorful dairy-free version of the classic green bean casserole.

- 1pound fresh green beans, trimmed
- 1 cupdairy-free cream of mushroom soup
- 1 cupvegetable broth
- 1 cupcrispy fried onions
- 2cloves garlic, minced
- 1/2 teaspoonblack pepper
- 1/2 teaspoonsalt
- 1 tablespoonolive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch the green beans in boiling water for 5 minutes, then drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add the cream of mushroom soup and vegetable broth to the skillet, mixing well.
- Season with salt and pepper, then stir in the blanched green beans.
- Transfer the mixture to a baking dish and top with crispy fried onions.
- Bake for 25 minutes or until heated through and golden brown on top.
Notes
Feel free to add other vegetables like mushrooms or corn.
Store leftovers in an airtight container in the refrigerator.
This dish can be made ahead and reheated before serving.
