A hearty veggie breakfast casserole packed with nutritious vegetables and eggs.
Ingredients

- 6large eggs
- 1 cupmilk
- 1 cupdiced bell peppers
- 1 cupchopped spinach
- 1 cupdiced tomatoes
- 1 cupshredded cheese
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1 teaspoongarlic powder
- 1 teaspoononion powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add bell peppers, spinach, tomatoes, cheese, salt, pepper, garlic powder, and onion powder to the egg mixture.
- Mix well until all ingredients are combined.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the eggs are set and the top is golden.
- Let it cool for a few minutes before slicing and serving.
Notes
Feel free to add your favorite vegetables.
This casserole can be made ahead and stored in the refrigerator.
