  • 1 envelope Knox unflavored gelatin 7g / ¼ oz
  • ¼ cup cold water for blooming
  • ¾ cup hot water 140°F — hot but not boiling
  • 2 tablespoons fresh lemon juice about half a lemon, freshly squeezed

Method
 

Make the Gelatin Trick
  1. Pour ¼ cup cold water into a cup or bowl. Sprinkle the Knox gelatin envelope evenly over the surface — do not stir. Wait 2 minutes. The gelatin will absorb the water and swell into a soft, spongy mass. This blooming step is essential — skip it and you'll get lumps.

  2. Heat ¾ cup water to about 140°F — hot enough to dissolve the gelatin, but not boiling. Boiling water above 160°F breaks down the gelatin proteins and weakens the effect. Pour the hot water over the bloomed gelatin and stir continuously for 90 seconds until no granules remain.

  3. Add 2 tablespoons of freshly squeezed lemon juice. Stir to combine. The lemon brightens the flavor significantly — without it the drink tastes flat. Bottled lemon juice works but fresh is noticeably better.

  4. Drink warm, 20–30 minutes before your largest meal of the day. This timing window matters — too close to the meal and the appetite effect hasn't had time to register. If you prefer it cold, refrigerate for 1 hour for a light gel consistency.

Notes

Sara's tip: Knox gelatin has the most neutral flavor of any brand I've tested — better than Great Lakes for this recipe because you're drinking it warm.
For the Jillian Michaels version: swap ¾ cup hot water for ¾ cup brewed ginger tea, and add 1 tsp honey.
For the GLP-1 protocol version: add ½ tsp glycine powder and 1 tbsp apple cider vinegar.
Consistency matters more than perfection. 5–7 days of daily use before your main meal is the minimum useful test.
